Salsify from Selva
Salsify is the edible root of a plant with the botanical name of Tragopogon porrifolius, part of the Asteraceae family. It’s native to the Mediterranean region of southern Europe and has historically been cultivated in the counties of Girona, enjoying a long gastronomic tradition in the county of Selva.
Salsify has formed part of the county’s culinary tradition since ancient times and is used as a side ingredient in many stews.
